Cauliflower Fried Rice
You will love this delicious, low carb, cauliflower fried rice! Made with cauliflower rice and mixed veggies. Just 7 net carbs!

- 450 g riced cauliflower
- 1/2 cup olive oil
- 1 cup chopped liver
- 2 chopped scallions
- 2 cups mixed veggies peas, carrots and green beans
- 2 tbsp curry powder
Add olive oil to a large skillet.
Once heated, add chopped scallions and fry for a minute.
Add carrots, peas, corn, green beans and your favorite spices and stir for 10 minutes.
Add cauliflower rice and curry powder and let cook for another 8-10 minutes.
Serve and enjoy!
