Cauliflower Fried Rice

Ingredients

  • 450 g riced cauliflower
  • 1/2 cup olive oil
  • 1 cup chopped liver
  • 2 chopped scallions
  • 2 cups mixed veggies peas, carrots and green beans
  • 2 tbsp curry powder

Instructions

  • Add olive oil to a large skillet.
  • Once heated, add chopped scallions and fry for a minute.
  • Add carrots, peas, corn, green beans and your favorite spices and stir for 10 minutes.
  • Add cauliflower rice and curry powder and let cook for another 8-10 minutes.
  • Serve and enjoy!
